Title: Garden Salad with Creamy Herb Dressing

1cJicama -- peeled and
  Julienned
1cWatercress -- chopped
3cTorn red leaf lettuce
1/2cSliced radishes
2tbLime juice
1/4cTarragon vinegar
1tbHoney
1/2cSoft tofu
1tsOlive oil
1tsLow-sodium soy or tamari
  Sauce
1tbStone-ground mustard
2tsMinced parsley
1/2tsChopped fresh thyme
1/2tsMinced fresh basil

1. In a large salad bowl, toss together jicama, watercress, lettuce, and radishes.

2. In a blender puree lime juice, vinegar, honey, tofu, oil, and soy sauce until creamy. Stir in mustard, parsley, thyme, and basil, and pour over salad. Toss well and serve.
